200g salmon

70g uncooked rice

Frozen mixed vegetables

3 tbsp olive oil




  1. Fill a deep pot half way with water and bring it to the boil. Add the frozen vegetables and boil for 10 minutes. Use a strainer to remove the water.
  2. In a smaller pot, add 150 ml of water, 1 tbsp olive oil, salt and pepper and bring it to the boil. As soon as the water starts boiling add the rice and cover with a lid. Cook for 10 minutes.
  3. Preheat the oven at 180 degrees on fan.
  4. In an oven pan, add a piece of baking paper, the salmon and drizzle 2 tbsp of olive oil on top of it. Add salt and pepper. Cook for 10-15 minutes.
  5.  Serve while hot.
